Green Peas Chat (Ragada)
One more mouth watering chat is ragada. Healthy as well as tasty one. For this I prefer white dry peas to green dry peas. Dont use fresh peas.
Ingredients:
-1 cup dry peas
-1 big potato
-1tsp ginger/ginger garlic paste
-2 medium size onion
-1 medium size tomato
-chat masala
-red chili powder
-tamarind extract/lemon juice/dry mango powder
-turmeric powder
-coriander powder
-salt
-2tsp corn flour
-1 tbsp oil
-4 mint leaves (opt)
-corinder leaves(opt)
-sev(opt)
-sweet chutney(opt)
-green chutney(opt)
-water
Procedure:
-soak the peas for 5-6 hrs.
-cook soaked peas along with potato, 2 cups of water and 1 tsp of oil in a pressure pan for 5-6 whistles to make them soft.
-when you are about to eat, take a wide pan with a 2 tsp of oil and heat it.
-add finely chopped 1 onion and saute till they become soft and change the colour.
-add ginger paste and saute for 1 more min.
-add finely chopped tomatoes and saute till they turn soft.
-add smashed potato and saute it.
-add salt, 1 tsp chat masala, 1/4 tsp red chili powder, pinch of turmeric, 1/4 tsp coriander powder, mint leaves, and saute thoroughly.
-drain water from the peas and finely smash it and add to the pan and saute for 2 mins.
-add the stock and more water.( the thiness must be 3 times than you eat) add 1/4 tsp tamarind extract and cook with continuous stirring.
-when bubbles are coming add cornflour water.( For this mix 1 cup of water with the cornflour in a bowl.) and stir continuously. When it looks semisolid check the taste and turn off the flame.(It will become thick when it is becoming cool. So prefer to thin consistency)
-take it in the serving bowls and garnish with finely chopped onions and coriander leaves, sev, sweet chutney and green chutney.
