Bottle guard Chutney

Chutneys have a special place either with  tali or tiffin. Even the patients who doesnt show interest for food, prefers chutney because of its hot and sour taste. Generally children who doesnt like to eat a particular veg. if made as chutney doesnt show hesitation. As bottle guard/sorakaya/kardu is very healthy veg, try it in a tasty way.

Ingredients:

-2 cups of bottle guard pieces
-1 dry red chili
-few mustard seeds
-few fenugreek seeds 
-few coriander seeds
-few jeera
-small piece of tamarind
- salt
-1 tsp oil
-1clove garlic(opt)
-small onion (opt)
-pinch of turmeric


Procedure:

- peal the bottle guard and cut into thin slices.
-take a deep pan with oil and heat it.
-add bottle guard slices, salt,garlic and tamarind and saute them with occasional stirring on low flame. In the beginning  cover with lid. Once the water secrets remove the lid. When they become soft and water evaporates turn off the flame.
-in a separate pan fry mustard, jeera, coriander, fenugreek seeds and chili on low flame and grind into powder.
-grind bottle guard along with powder just for a turn . Dont make it into fine  paste.
-add finely chopped onions.
- you can have this chutney with rice, chapatti or iddli.

Tips:

-for better taste add tarka
-have the chili and tamarind as per your taste.
- remember bottle guard needs very less salt.
-you can substitute chili, fennugreek, coriander, jeera seeds with powder and tamarind with extract.
