Ridge Guard (Beerakaya) Chutney



Chutneys have a special place either with  tali or tiffin. Even the patients who doesnt show interest for food, prefers chutney because of its hot and sour taste. Generally children who doesnt like to eat a particular veg. if made as chutney doesnt show hesitation. As per my knowledge one of such avoiding veg. is ridge guard which is preferable even by patients.

Ingredients:

-1/4kg ridge guard
-1 tomato(opt)
-1big chili
-small piece of tamarind
- salt
-1 tsp oil
-1clove garlic(opt)
-coriander leaves(opt)
-1 small onion(opt)

Procedure:

- peal the ridge guard 25% only and cut int thin slices.
-take a deep pan with oil and heat it.
- cook on low heat. add ridge guard slices and saute them with occasional stirring. In the beginning  cover with lid. Once the water secrets remove the lid. When they were half cooked add chili pieces. After 5 min add tomato pieces. When all the vegs were cooked add salt and tamarind. When they look little wet turn   off the flame.
- when it is warm, grind it just for a turn along with garlic and coriander leaves. Dont make it into fine  paste.
-add finely chopped onions.
- you can have this chutney with rice, chapatti or iddli.

Tips:

-you try avoiding each opt ingrdient for different taste.
-have the chili and tamarind as per your taste.
- remember, ridge guard needs very less salt.
